Menu Monday

 
Monday: My sweet Mom is making dinner! If I can containg myself long enough to take a photo, I'll post the recipe of her wonderful Mexican Casserole.
Wednesday: Taco Salads with Sweet Chilie Pork (from the freezer)
Thursday: Sweet Citrus Grilled Chicken with spaghetti squash
Friday: Peach Days (We will be eating yummy fair food)
Saturday: Peach Days (We will be eating yummy fair food)
Sunday: Lasagna, breadsticks and green salad

Mini BBQ Chicken Pizza

I love anything mini. :) And I love pizza. So mini pizza? This was right up my alley ;)
You could really do this with any kind of pizza, I just happened to have a hankering for bbq chicken that night.
Mini BBQ Chicken Pizza
makes 4 mini pizzas
Pizza dough (I used this recipe)
2 cups shredded chicken
BBQ sauce
shredded mozzerella cheese

Once you have made your pizza dough, divide into 4 equal portions, roll into cirlces and bake according to recipe directions until crusts are about 3/4 done. (mine took about 10 minutes)
While crusts are cooking, mix chicken and bbq sauce, I didn't put an amount because it depends on how 'saucy' you like it, and how dry your chicken is.
Remove crusts from oven. Spread about 2 TBS of bbq sauce on each crust, and top with 1/2 cup of the chicken. Top with cheese and return to the oven until cheese is melted and crusts are done cooking.

Fall Fragrances

I have a confession... yesterday I busted out the fall candles. Yes, it's still August, and after this storm rolling through southern utah passes, it will be back into the 90's. However, I am 100% ready for fall to be here, so I thought I'd trick myself into it... or at least my nose ;)
Awhile back, I shared my favorite Scents for Summer. So it was only fitting, now that I've busted out the cozy, warm scentsy melts, I share my favorite Fall Fragrances!
1. Oatmeal Cookie - Not only is this one of my favorite cookies, its one of my favorite scents for fall! I actually think it was the first melt I bought! It's sweet and warm, with a touch of cinnamon! Mmmm.
2. Maple Candied Almond - This smells like warm french toast on a cold sunday morning! How's that for a description!? But really, the maple scent of this bar is amazing!
3. Ginger Spice Cake - I have shared this one before on a What I Love Wednesday. It's a super spicy, sweet smell. Think... Carrot Cake, mixed with Ginger snap cookies.
4. Baked Apple Streudel - 3 words. Hot. Apple. Pie. Seriously, this smells SO yummy! Like thanksgiving dessert. Without all the calories.
5. Hot Wassil - This is hands down my favorite cold weather scent. And to be honest, I would of never picked it up had it not been for me smelling it in a friends house! It's not sweet, like food sweet. It's hos a really spicy, citrus scent. SO good!

Fuji Chicken Sandwich

I get a lot of odd looks when I mention that one of my favorite sandwich toppings is... apples! Yes, apples! Especially in summer! It just adds a nice crisp, sweet taste that you don't get from anything else!
Makes 2 sandwiches
4 slices Whole Grain Bread
Chicken breast lunch meat
1 fuji apple
letttuce
red onion
miracle whip (or mayo)
yellow mustard

I think making a sandwich is pretty self explanitory ;)
I just sliced the apple in 1/4 inch slices and added it to the middle of the sandwich.
Soooo yummy! Try it!

7 Layer Bean Dip

I don't know about anyone else, but in my family, this dip is a staple at parties and get togethers! What I have learned, however, is that while most families I know make this dip, everyone makes it a little different! So this is my version!

1 can fat free refried beans
1 small tub guacamole (or about 1 1/2 cups homemade)
1 (15 oz.) tub sour cream
4 TBS taco seasoning
1 cup shredded cheese
1 small jar of chunky salsa
1 cup sliced olives
cilantro

Spread beans in the bottom of an 8x8 casserole dish.
Top with guacamole and spread evenly.
In a bowl, mix sour cream and taco seasoning. Spread that mixture over the guacamole.
Top with cheese.
Drain salsa of most of the liquid, and spread ofer the cheese.
Top with olives,
and then cilantro.
Chill for an hour and serve with tortilla chips.

Low Fat Guacamole

I love guacamole! I was a little weary to try this version, but I really really liked it!


1 avocado
1 cup thawed green peas
2 tbsp chopped fresh cilantro
2 TBS picante sauce
1 tbsp chopped red onion
1 TBS fresh lime juice
1/4 tsp garlic powder
1 teaspoon salt
1/2 teaspoon black pepper

Coconut Lemon Pancakes

Breakfast for dinner is one of my favorite things to make... mostly because of the fast prep and easy clean-up. But last night, I decided to pump things up a bit and revamp our basic 'maple-syrup-flapjacks. And OH! These pancakes were divine! They are so fresh and light, with just a hint of coconut! I am slightly obsessed. Just slightly.

Coconut Lemon Pancakes
Basic baking mix- with whatever you need to prepare it, use enough to make around 8 pancakes
1/2 tsp lemon extract
1/2 tsp coconut extract
1/4 cup shredded coconut (optional)
1/2 cup powdered sugar
 3-4 TBS milk

Prepare pancake mix, and add lemon and coconut ectract. Cook pancakes.
Instead of maple syrup, mix powdered sugar and milk to create a thin glaze. Drizzle over warm pancakes

Pan Seared Lemon Chicken

2 chicken breasts, butterflied (cut in 1/2)
1/2 tsp salt
1/2 tsp black pepper
1/2 cup lemon juice

 After you butterfly your chicken, season with S&P. In a pan, heat a few tsp of olive oil. Add chicken and cook for about 10 minutes, turning every once in awhile. When chicken is no longer pink, add lemon juice and cook for 5 more minutes, turning once.
