Menu Monday (on a Tuesday)

Ooops. I did it again. In all honestly though, Thanksgiving needs to be on a Monday. Because who wants to plan meals when you have Thanksgiving dinner on the brain!? Not me. That's who. But, alas. Here I sit. Planning away.

Monday: We spent the night Christmas shopping, and stopped at In-N-Out Burger. MMM! I did make a yummy lunch though! Crispy Chicken Rancheros! A Taco Time Copycat recipe! 
Wednesday: Salmon Burgers and green salad
Thursday: HAPPY THANKSGIVING! I'll be making Pumpkin and Pecan pies!
Friday: Leftovers :: I'm thinking about making Chicken Pot Pie Biscuits and Gravy, but with Turkey!
Saturday: BBQ Beef Pizza (take a break from all the turkey!)
Sunday: Crockpot Beans and Ham

Ps. I need LUNCH ideas!! Do you have any good ones!? I'm pretty sure my poor husband is sick to death of quesadillas and chicken sandwiches!!!

Menu Monday


Whew! These last few weeks have been a killer! My sweet baby girl got hit with the fllu :( And we took 2 trips to Insta-Care, one for our little guy, and one for my poor husband who got cement powder in his eyes. I'm praying this week is boring. I need a boring week! :)

Monday: Chicken and Stuffing Casserole and green salad
Wednesday:  Taco Pizza
Thursday: Beans and ham in the crockpot with biscuits
Saturday: Date Night
Sunday: Crockpot Lasagna

Fresh Veggie Pizza



2 cans crescent rolls
1 pkg cream cheese
1 pkg dry ranch dip mix
Fresh veggies: Carrots, broccoli, celery, cucumbers, zucchini, olives, cauliflower, tomatoes, green onion, etc.

Open your crescent rolls, and on a greased cookie cheat, spread them into a single layer and pinch the seams together, so you form one big rectangle.
Bake according to package directions.
While the crescents cool, mix together the cream cheese and ranch mix until well blended. Chop veggies.
Once the crescents are cooled, spread on top of the crescent base. Top with veggies, cut into squares and enjoy!

Mookies {Muffin Tin Cookies}



2 cups plus 2 tbsp. all-purpose flour
½ tsp. baking soda
½ tsp. salt
12 tbsp. unsalted butter, melted and cooled until warm
1 cup brown sugar, packed
½ cup granulated sugar
2 eggs
2 tsp. vanilla extract
1 cup chocolate chips 

 Preheat oven 325°.  Grease a mini muffin tin.

Whisk dry ingredients together in a medium bowl and set aside.  In a mixer mix butter and sugars until light and fluffy. Beat in egg  and vanilla until combined.  Add dry ingredients and beat at low-speed just until combined.  Stir in chocolate chips.

Spoon small spoonfuls into your hand, and roll into about 1" balls, place a ball in each muffin tin.
Bake for 15-18 minutes. 
Allow to cool completely before removing each cookie from the tin by running a butter knife around the outside of the cookie, loosening it from the sides.
