- 1 and 1/2 cups buttermilk (or 1 and 1/2 cups milk with 2 TBS lemon juice)
- 1 cup all-purpose flour
- 1 cup while wheat flour
- 1/4 cup white sugar
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 egg
- 1 tsp cinnamon
- 2 tsp vanilla
- 4 tablespoons butter, melted
- cooking spray
- Mix flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- In a separate bowl, whisk egg and butter into the buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Carefully flip with a spatula, and cook until browned on the other side.
