Cinnamon Wheat Pancakes

Cinnamon Wheat Pancakes
  • 1 and 1/2 cups buttermilk (or 1 and 1/2 cups milk with 2 TBS lemon juice)
  • 1 cup all-purpose flour
  • 1 cup while wheat flour
  • 1/4 cup white sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 egg
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 4 tablespoons butter, melted
  • cooking spray
  1. Mix flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  2. In a separate bowl, whisk egg and butter into the buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Carefully flip with a spatula, and cook until browned on the other side.
