Freezer Breakfast Burritos {Re-visited}

 I've posted about breakfast burritos for the freezer before, but if you know anything about me... you know I can't just leave things alone! But. I'm glad I redid these! They are SO good! My husband is loving having big, filling berritos each morning for breakfast! And I love knowing that he isn't eating sugared cereal to start off his day!
These are really pretty simple! I just started with our favorite burrito components....
I used...
21 eggs+a splash of milk +s&p + 1 cup spinach
18 slices of bacon fully cooked and cooled
about 8 cups of hashbrowns
shredded cheese
burrito sized flour tortillas

First I started by prepping all the ingredients;
scrambling the eggs and spinach (the spinach is totally optional, but you cant taste it, and it just adds a litte more nutrition)
cooking the bacon (I did it in the oven)
frying the hashbrowms in a little butter
and shredding the cheese (I used a food prosessor)

Then, after everything had cooled, I set up my assembly line (pictured above) and started rolling!
In each burrito I used about 1/2 cup eggs, 1/4 cup hashbrowns, 2 TBS bacon and a sprinlke of cheese.

After all the burritos were rolled, I wrapped them tightly in plastic wrap, and put them in gallon freezer bags.
I ended up with almost 20 burritos, which will last us probobly over a month.
To reheat, unwrap, and  microwave for about 2-3 minutes.
they are wonderful to have on hand, and I think we figured they cost around .80 cents per burrito, but they are HUGE compared to mcdonalds $1 burritos! And, I know exactly what is in them, so to me, they are totally worth the time!

I've been meaning to make freezer-friendly breakfast burritos for awhile now. I'm so glad I waited because I had never even thought of adding spinach, which we love at our house, so I am totally going to do this! Thanks so much for sharing.

quick question for you - I made these a week ago and we've been enjoying them ever since... however, when we microwave them, the tortillas get pretty hard. similar to a fresh tortilla that's overheated. have you tried anything specific that will prevent the hardening tortilla?

@Kaesie- I hope you get this comment! I tried to relpy but your settings are private! :) We leave the burrito in the saran wrap and that seems to do the trick for us! I hope it helps!

I made these with whole grain tortillas and they seem to get slimy when I reheat. I tried a couple different methods of reheating: 2 min in microwave with wrap still on, 1 min in wrap and 1 min out of wrap. Still slimy on the bottom. I'll try a paper towel under it tomorrow. I love the convenience of these, just wish it wasn't slimy. :)

I found these via pinterest and they are the perfect fast breakfast for my boyfriend before he heads to work. Ive also added sirarchia hot sauce and ive made a few different types, buffalo chicken (tyson popcorn chicken baked n cooled then tossed in franks buffalo wing sauce 4 to 5 pieces per burrito, small diced celery, and crumbled blue cheese), sausage (replace bacon), added diced cooked onion, green peppers, mushrooms, chicken cordon bleu (popcorn chicken, ham, swiss cheese), and taco. I still use eggs, spinach, hashbrowns, and cheese in all of them. Thank you for the base recipe!

I have made these a couple times for my husband & he loves them. He asked me this morning if I could make another batch. I done it with bacon & I've also used turkey breakfast sausage. I think I might try putting some hot sauce into the scrambled eggs on the next go around. I particularly like spooning salsa onto mine! Cooked onions & peppers sound like a GREAT idea!
Be sure to use *fresh* tortillas which will help when you are rolling them. If they aren't fresh they have a tendency to split when you roll them.

Loved this idea!!! I started doing this about 2 wks ago..last week, we used chrizo and eggs..with cheese!! Yummo! The week before was sausage, onions, green peppers and cheese mixed with eggs. .love it!!

I would maybe START with 18 slices of bacon, but there is NO WAY I would END with 18 slices of bacon. But the rest is almost exactly how I do mine. Well, except that I scramble the eggs WITH the cooked hashbrowns.

These look just like the breakfast burritos I fix, except I use sausage instead of bacon. On my site I give a little hint on reheating that really works and the tortilla is NOT hard. Would love for you to check it out.

I make a similar recipe but omit the potatoes, add 1 sm can of chopped green chilis and 4 oz. softened cream cheese to egg, cheese and sausage mixture! They are divine! I heat my tortillas before rolling and reheat in damp paper towel for 30 second intervals! Love ur blog!!

Wrap them in a damp tortilla. It will steam the tortilla while heating up the middle.

Amanda, I haven't tried this specific recipe but made a basic burrito with scrambled eggs, bacon and American cheese and they were also watery. I think the American (low fat) cheese may have been the culprit. What cheese did you use?
