Stir Fry {Guest Post by Mindy}

What a yummy Colorful meal, right?!
This is one of the favorite meals at our house.
It's quick, easy, and you can basically put whatever
un-used veggies or meat you have around, in it.

Ingredients:
1 green pepper
1 red pepper
1 yellow pepper (optional)
1 can pineapple chunks (drain juice out)
1 yellow squash (*)
1 Hillshire Farms Smoked Sausage (**chicken or steak would be good to)
Lemon Pepper
Butter (or margarine)
White Rice (enough for your family)

Start your rice in Rice Cooker.
Chop up your veggies & meat all into bite sized pieces. In warm skillet, add: 2 tbsp. butter (margarine) and Meat. Cook on MED heat for about 5-7 minutes stirring frequently, so not to burn the meat. Add all veggies. Sprinkle on Lemon Pepper, as much as you like. Keep stirring, add more butter if everything starts to stick to pan. Keep sauteing until veggies soften, but before they are mushy (about 7 minutes).
Scoop Rice on plate, top with meat and Veggies mix. ENJOY!

*I usually put the yellow squash in just a few minutes before it's done. Squash tends to cook really fast.
**If you choose to do chicken or steak, cook in separate pan, season as you like, then add to veggies.
