Pretzel Chicken Strips

I was really excited to try this recipe! I'm pretty sure the first time I saw this idea was on pinterest, but I just took the idea and made up my own recipe, and it turned out WONDERFUL! This is definetly a recipe that I will make again and again!

Pretzel Chicken Strips
Makes about 6-8 strips
1/2 cup finely crushed pretzels
1/4 cup panko bread crumbs
1/2 t. garlic powder
1/2 t. onion powder
1 egg
1/2 cup flour
salt and pepper
 2 chicken breasts pounded to 1/2 inch thick and cut into strips

Mix the dry ingredients in a shallow dish. In a seperate shallow dish, beat the egg with a splash of water and add a little salt and pepper. In a third shallow dish, mix flour with a little more salt and pepper. Starting with the flour, dredge your chicken strips one at a time, shaking off the excess flour. Then dip in the egg mixture, then into the pretzel/breadcrumb mixture. Place the coates strips on an oven safe cooling rack that is on top of a cookie sheet. This helps the air get all the way around the chicken, so you dont end up with soggy bottoms! :)
Bake at 400 for 20-30 min. We like our chicken a tad dry, so check yours often to make sure it's not overdone for your liking.

For the dip, I mix 1/2 cup miracle whip with 2 TBS yellow mustard. SO yummy! My mom made this dip for chicken when we were little, and it's still one of my favorites!
