Loaded Enchilada Bowls
2 cups cooked rice
1 can pinto beans (or black beans, kidney beans just whatever you have)
1 can corn
1 small can Enchilada sauce
1 cup ground beef (cooked)
1 tsp Taco Seasoning
1/2 cup Cheddar cheese plus some for topping
Add all ingredients except cheese in a sauce pan and heat on low until warmed through. Add cheese and stir. Top with more cheese.
Easy huh! And it's SO good!
